Suspect a gluten problem? Head to the National Foundation for Celiac Awareness . They have a fabulously informative website…and they host Cooking Sprees. The Sprees are what earned the NFCA a Quest for The Best honoree status.

Here’s what I mean: if you can’t tolerate gluten, the “pill” is to stop eating the stuff. No invasive treatments. No limbs removed. Just don’t eat pizza, or bagels, or licorice, or soy sauce, or...you get where I’m going. Gluten is the second most prevalent ingredient in our diets, and because celiac diagnosis can take 10 years, good gluten-free foods and celiac-knowledgeable doctors are two of the most important aspects of “curing” celiac disease.

Thankfully, the NFCA educates chefs and doctors, enlightening the two ends of the gluten gamut that can best shut down this increasingly common disease.
